Italian Chopped Sandwich

  • 1 large Italian roll or ciabatta bread, sliced in half
  • 4 slices of salami
  • 4 slices of mortadella
  • 4 slices of capicola
  • 4 slices of provolone cheese
  • 1/2 cup chopped lettuce (romaine or iceberg)
  • 1/4 cup chopped tomatoes
  • 1/4 cup thinly sliced red onion
  • 1/4 cup sliced pepperoncini peppers
  • 1/4 cup sliced black olives
  • 1/4 cup sliced roasted red peppers

For the Dressing

  • 3 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 garlic clove, minced
  • Salt and pepper, to taste

Directions:

  1. Prepare the Dressing:
    • In a small bowl, whisk together olive oil, red wine vinegar, oregano, basil, minced garlic, salt, and pepper until well combined. Set aside.
  2. Assemble the Sandwich:
    • Lay the bottom half of the Italian roll or ciabatta bread on a clean surface.
    • Layer the salami, mortadella, capicola, and provolone cheese evenly on the bread.
    • In a separate bowl, combine the chopped lettuce, tomatoes, red onion, pepperoncini peppers, black olives, and roasted red peppers.
    • Drizzle the prepared dressing over the chopped vegetables and toss to coat evenly.
  3. Build the Sandwich:
    • Spread the dressed vegetable mixture evenly over the meats and cheese on the bread.
    • Place the top half of the bread over the fillings.
  4. Serve:
    • Cut the sandwich into halves or quarters, if desired.
    • Serve immediately and enjoy your delicious Italian chopped sandwich!
