
Nick Tenuta’s Sheet Pan Gnocchi with Italian Sausage, Roasted Tomatoes & Pesto Recipe
- 4 Links Greenridge Naturals Sausage (fully cooked)
- 1 package potato gnocchi
- 1 small container of baby tomatoes
- 2–3 tbsp Tenuta’s Homemade Pesto Sauce
- Grated Italian cheese (Parmigiano Reggiano or Pecorino Romano)
- Optional: Fresh basil or a drizzle of balsamic glaze to finish

Directions:
- Preheat oven to 425°F. Line a large sheet pan with parchment paper.
- Slice the sausage and tomatoes:
- Slice Greenridge Naturals Sausage (fully cooked), into rounds or half-moons.
- Combine Ingredients: In a large bowl, combine the gnocchi (uncooked), baby tomatoes, and sausage with a light drizzle of olive oil. Season with a pinch of salt and pepper.
- Add the flavor: Toss with Tenuta’s Homemade Pesto Sauce.
- Roast it up: Spread the mixture evenly on the sheet pan. Bake for 15-20 minutes, flipping once halfway. Gnocchi will crisp up, tomatoes will blister, and sausage will brown to perfection.
- Top it off: Shower it with freshly grated cheese and garnish with fresh basil or a balsamic drizzle for that final Italian touch.
Serves 4.
